We fell in love with Khao Soi during our time in Northern Thailand. Once you watch our video, you will understand why we adore this popular Thai noodle dish.

We ate a lot of Khao Soi in Chiang Mai. It’s fair to say that Khao Soi is a top contender for our favorite Thai food dish to eat in Northern Thailand.
We adore this soupy comfort food, loaded with a combination of both fried and boiled noodles. Khao Soi, Chiang Mai style, has yellow curry and coconut milk in a meaty broth flavored with beef, chicken or a combination of the two.
What makes Khao Soi especially interesting is its mixed heritage. Many of the curry flavors in the broth are Burmese, while elements of the dish, like the noodles, can be traced to Yunnan, China. We learned this and more during a Lanna Thai cooking class in Chiang Mai.
Add condiments like chopped shallots, pickled mustard greens, spicy chili and lime juice for the dish to sing with a great combination of acidity and spice.
