We ate a lot of Khao Soi in Chiang Mai. We adore this soupy comfort food, loaded with a combination of both fried and boiled noodles. Khao Soi, Chiang Mai style, has yellow curry and coconut milk in a meaty broth flavored with beef, chicken or a combination of the two. What makes Khao Soi especially interesting is its mixed heritage. Many of the curry flavors in the broth are Burmese, while elements of the dish, like the noodles, can be traced to Yunnan, China. Add condiments like chopped shallots, pickled mustard greens, spicy chili and lime juice for the dish to sing with a great combination of acidity and spice.
